Legendary State Fair Concessionaire to Open Eustace Restaurant

Fans of Cassy Jones Fried Collard Greens can now enjoy them at her new location

November 7, 2023 (Dallas, TX) – Celebrity Chef, Cassy Jones, will open her first brick and mortar restaurant location called Cassy’s Grill at 304 US Hwy 175, Eustace, TX. 75124 in December 2023. Famous for her Fried Collard Greens, the State Fair of Texas culinary legend is excited to bring her brand of cooking to customers in North Texas. Starting November 11, Jones will be serving out of her food truck in the parking lot while the restaurant is under construction with plans to open her doors early to mid-December. Customers can expect to see favorites including brisket, mac ‘n cheese, loaded baked potatoes (plain and brisket), honey pecan-glazed wings, buffalo wings, and of course, Fried Collard Greens with Chef’s specials changing weekly. Operating hours will be Sunday, Wednesday, and Thursday, 11 AM to 9 PM, Friday and Saturday, 11 AM to 10 PM, Closed Mondays and Tuesday.

Chef Cassy Jones loves to create traditional Southern dishes with a modern twist, blending her country roots with urban influences. When Jones applied to be part of the State Fair of Texas in 2013, she managed to skip the infamous wait list and landed a booth on the Midway the same year she applied, due in part to her Fried Collard Greens recipe. Ten years later, fans still flock to her stand to sample this savory soul food bite. Outside of the State Fair of Texas, Cassy runs a successful catering business providing her mouth-watering cuisine for private parties, family reunions, corporate retreats, and all sorts of events big and small. She also works as a private chef from time to time. Former Dallas Cowboys wide receiver Amari Cooper and current Seattle Seahawks player, Tyler Lockett are among some of her celebrity clientele.

Cassy recently appeared on the hit A&E show Deep Fried Dynasty, which showed the big personalities behind the mouth-watering food at the State Fair of Texas. The series was an inside look at how these imaginative foods come to life and the millions of dollars on the line for these family-run small businesses. Deep Fried Dynasty can currently be viewed on Hulu. Jones' infectious laugh and Southern charm has also landed her on The Kelly Clarkson Show, in an episode of Guy Fieri's grocery store-themed game show Guy’s Grocery Games on the Food Network, and she has appeared on The Cooking Channel’s Carnival Eats hosted by Noah Cappe.
